Ingredients
5 cups callaloo (chopped)
1/2 small onion (chopped)
3 cloves garlic (chopped)
1/4 scotch bonnet pepper
2 sprigs thyme
1/2 tsp all-purpose seasoning
1/2 tsp black pepper
2 tbsp water
3 tbsp Thalia’s pimento cooking oil
Method
1. Place chopped callaloo in a large sauce pan over medium heat and spread the chopped onion, garlic, scotch bonnet pepper on top.
2. Drizzle on the pimento cooking oil and allow to steam for about 15 minutes.
3. Gently mix the callaloo and seasonings and add the water.
4. Allow to simmer on low heat, stirring every 5 minutes until callaloo stem is tender and cuts easily with a spoon.
