Ingredients
1 1/2 lbs jumbo raw shrimp
3 cloves garlic (chopped)
1/2 small onion (chopped)
1/4 scotch bonnet pepper
3 stalks escallion (chopped)
1 tsp all-purpose seasoning
1/2 tsp black pepper
1 cup coconut milk
3 tbsp Thalia’s pimento cooking oil
Method
1. Place the shrimp in a bowl with 1 tablespoon of Thalia’s pimento cooking oil, 1/2 tsp all-purpose seasoning and 1/2 tsp black pepper. Mix well.
2. Heat a large sauce pan over medium heat with 2 tablespoons Thalia’s pimento cooking oil. Add the chopped garlic, onion, escallion and scotch bonnet pepper. Saute’ for about 1 minute.
3. Add the shrimp and cook for about 5 minutes, stirring often, until it starts getting pink.
4. Add the coconut milk and 1/2 teaspoon all-purpose seasoning. Allow to simmer for about 7 minutes. Serve.
